Almond Butter + Buckwheat Trail Mix Cookies

These cookies were originally posted on my food blog, but I thought they would be perfect here. Not too sweet, but sweet enough to be a cookie, these Almond Butter + Buckwheat trail mix cookies are the perfect fuel for a hike.



Here’s the recipe:

INGREDIENTS:

  • 1 Cup Whole Wheat Flour
  • 1 Cup Rolled Oats
  • 1/2 Cup Almond Butter I love Justin's brand in Vanilla
  • 1/3 Cup Maple Syrup
  • 2 Tbs Coconut Oil melted
  • 1/4 Cup Almond Milk
  • 1/2 Tsp Baking Soda
  • 1/4 Cup Almond Slivers
  • 1/4 Cup Chopped Walnuts
  • 2 Tbs Roasted Buckwheat


METHOD:

1. Preheat oven to 325 degrees F.
2. Mix almond butter, maple syrup, and coconut oil until well combined.
3. Then, mix in almond milk until the batter reaches a creamy consistency.
4. Combine all other ingredients until oats, almonds, and walnuts are evenly mixed.
5. On a tray lined with parchment paper, create 1-inch diameter cookie balls by hand or using an ice cream scoop. Flatten with hands until cookies are about 1/2 inch thick. Recipe should yield approx 14-16 cookies.
6. Bake in oven from 12-14 minutes, checking often at end to make sure they don't burn!
